Heat accelerates chemical reactions in wine, producing stewed, jammy, flat flavors. Cooked wine loses its freshness, structure, and aging potential. Physical signs include a pushed-out cork (from thermal expansion), sticky residue around the capsule, and premature browning. Even brief exposure to extreme heat (50°C+) during shipping or storage can cause irreversible damage.
