Leaving wine in contact with skins and seeds for weeks or months after fermentation completes. This extracts additional tannin, color, and complexity. Used for age-worthy reds — Barolo (30-60 days), Bordeaux, and premium Cabernet. Requires careful management to avoid harsh, bitter tannins.
