White wines turning deep gold or amber and red wines turning brick or brown suggest oxidative damage. Some browning is natural with age, but rapid browning in young wine indicates a fault — poor SO2 management, cork failure, or heat exposure. The phenolic compounds responsible for color polymerize with oxygen. A browning wine's flavor will also be compromised.
