Resveratrol is a stilbene compound produced by grapes in response to fungal infection or UV stress. Red wine contains 0.2-12.6 mg/L depending on variety and winemaking. It gained fame from French Paradox research suggesting cardiovascular benefits. Subsequent studies have been mixed — the amounts in wine are likely too small for significant effect, but the compound remains wine's most famous health-linked molecule.
