À Propos de Cette Méthode
Drawing off a portion of juice from red grape must early in maceration to produce rosé, while concentrating the remaining red wine. A pragmatic two-for-one technique: the rosé gains color and flavor from brief skin contact, while the red gains intensity. More robust rosés than direct-press method.
