Astringency is a tactile sensation, not a taste. Tannin molecules bind with saliva proteins, causing them to precipitate and creating a rough, drying mouthfeel. Young red wines with high tannin are often astringent. With aging, tannins polymerize and become softer. Pairing tannic wine with fatty food reduces perceived astringency.
