Definition

Freshly pressed grape juice before or during fermentation.

In Depth

Must contains grape juice, skins, seeds, and pulp. Its sugar content (measured in Brix, Baumé, or Oechsle) determines potential alcohol. Must weight — the sugar concentration of unfermented juice — is a key quality metric. In some regions, must can be concentrated (saignée, reverse osmosis) or chaptalized (sugar added) to increase alcohol potential.
