Winter pruning determines the following season's crop level and vine architecture. Spur pruning leaves short stubs with 2-3 buds; cane pruning retains longer canes with 8-12 buds. The decision depends on vine variety, training system, and quality goals. More buds mean higher yield but potentially lower quality. Pruning is the vineyard's most labor-intensive task.
