Green, vegetable-like aromas such as asparagus, green beans, or bell pepper.

Vegetal character at low levels can add complexity (herbal, leafy). At high levels, it signals underripe grapes — a flaw. Methoxypyrazines cause green bell pepper notes in Cabernet Sauvignon and Cabernet Franc. Sauvignon Blanc naturally shows grassy, asparagus, and gooseberry character that is varietal, not a defect.
