About This Method

Aging wine on its spent yeast cells (lees). As yeast cells break down (autolysis), they release mannoproteins and amino acids that add richness, creaminess, and complexity. Muscadet Sur Lie, Champagne (tirage), and premium Chardonnay all benefit. Bâtonnage (stirring) accelerates the process.
