Drawing out color, flavor, and tannin from grape skins during maceration.

Extraction is controlled through temperature, time, and physical manipulation. Gentle extraction preserves fruit purity; aggressive extraction yields dark, tannic wines. Over-extraction produces bitter, harsh wines that age poorly. Modern winemakers favor gentler approaches than the prolonged, hot fermentations of past decades.
