About This Method

Fermenting two or more grape varieties together in the same vessel. Different from blending after fermentation, co-fermentation integrates flavors more intimately. The classic example: Syrah with a small percentage of Viognier in Côte-Rôtie, where the white grapes stabilize color and add aromatic lift.
